At Sassafras Meadows we currently grow 4 varieties of garlic. Those 4 varieties are placed in 3 different groups, namely Turban, Artichoke and the Creole group. Take a look below to see what we offer.

Turban Group

Flavour: Somewhat hot when raw, but milder when cooked

Available: January onwards

Storage: 4 – 6 months after harvest in late November

  • This is a true home-grown variety. We originally it at a local supermarket, some 15 years ago, and have continued to grow it in our vegie patch every year since then. It is very similar to another variety, White Crookneck, but we think it has a fuller flavour, and it also seems to keep better. We simply call it Husky White; named after where we live. Usually white, but will at times throw out bulbs with purple streaks. Easy to peel and has a nice rounded flavour, which when used raw tends to be somewhat strong. Will store for up to 5 or 6 months.

Artichoke Group

  • As the name indicates, a mostly white looking garlic, which may have a few purple streaks. The flavour is on the milder side of the spectrum, and as such is easily used in most types of cooking. Well suited for the mild palate in dishes such as guacamole or in pesto sauces where the garlic is used raw. Our Australian White is typically harvested in early December, and normally available in January after it has been cured, cleaned and trimmed. Will normally store for 5 – 8 months after harvest

    This variety is similar in appearance to “Australian White”, but has a stronger taste. While garlic isn’t quite chilli, the flavour of this variety is rich with a hot if not aggressive aspect to it; ideal for those tasty meals where you want to add a bit of zing! Harvested in early December and available for sale in January. It will store for 5 – 8 months under the right conditions.

Flavour: Tends to be on the milder side

Available: Mid-January onwards

Storage: 5 - 8 months following December harvest

Creole Group

Flavour: Hot and spicy

Available: Late-January onwards

Storage: Up to 9 months following late December harvest

  • Excited to present this burgundy to purple-coloured variety as a somewhat different one to the others we produce here at the “Meadows”. This variety is probably the richest, most direct flavoured and hottest garlic out of our paddock. If you belong to those who like to head for the spice rack, this variety is for you! Rojo de Castro is the late one around here; last one to be planted, last one to be harvested, and therefore the last one available; late January onwards. But all good things come to those who wait! This variety will store for up to 9 months and beyond under the right conditions. Imagine being able to lay your hands on Australian-grown garlic all through winter if not into spring
